Kokoretsi vom Lamm

Original Titel: Κοκορέτσι από αρνίσια συκωτάκια

Hierbei handelt es sich um ein traditionelles griechisches Gericht, bestehend aus den Eingeweiden von einem jungen Lamm auf einem Spieß, umwickelt mit Därmen. Das klingt jetzt erst einmal etwas speziell, die Verarbeitung sämtlicher Teile eines Tieres steht hier ganz einfach im Vordergrund.

  • Pfeffer
  • Oregano
  • Kreuzkümmel

Zubereitung:

Die Eingeweide und Därme gut reinigen. Die Därme auf links drehen und ebenfalls von innen gründlich reinigen. Dann alles gut abtropfen lassen. Schneiden Sie die Innereien in Wallnussgroße Stücke und würzen diese. Nun werden die Innereien auf einen langen Spieß gesteckt. Das Ganze wird dann mit den Därmen umwickelt bis kein Fleisch mehr zu sehen ist. Anschließend mit Olivenöl und Zitrone einreiben und noch einmal tüchtig würzen. Jetzt den Spieß für ca. 2 Stunde am Feuer grillen. Normaler Weise wird das Ganze an einem offenen Feuer oder einem großen Grill zubereitet. Falls Sie nur einen kleinen Hausgrill zur Hand haben, verwenden Sie einfach kleinere Spieße, das sollte ebenfalls funktionieren.
